Ingredients

1 cup pumpkin puree (canned or freshly made)

1/2 cup granulated sugar

1/4 cup packed brown sugar

1/4 cup vegetable oil

1 large egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 tablespoon pumpkin spice mix (or a homemade blend of cinnamon, nutmeg, and ginger)

1/2 cup powdered sugar (for glazing)

1-2 tablespoons milk (for glazing)

Instructions

Preheat the oven: Start by preheating your oven to 350°F (175°C). Lightly grease a mini donut pan with cooking spray or a small amount of oil to prevent sticking.

Mix the wet ingredients: In a large mixing bowl, add the pumpkin puree, granulated sugar, packed brown sugar, vegetable oil, egg, and vanilla extract. Use a whisk to mix these ingredients together until the mixture is smooth and well combined.

Prepare the dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and pumpkin spice mix. Make sure to break up any lumps in the flour so that the mixture is uniform in texture.

Combine the wet and dry mixtures: Gradually fold the dry ingredient mixture into the wet ingredients. Stir gently until the batter is just combined—be careful not to overmix; a few lumps are perfectly fine.

Fill the donut pan: Using a spoon, fill each cavity of the prepared mini donut pan with batter until it is about two-thirds full. For a cleaner and easier method, consider using a piping bag or a ziploc bag with a corner cut off to pipe in the batter.

Bake the donuts: Place the filled donut pan in the preheated oven and bake for 10-12 minutes, or until the donuts spring back when lightly touched and a toothpick inserted into the center comes out clean.

Cool the donuts: Allow the mini donuts to cool in the pan for about 5 minutes. After that, carefully transfer them to a wire rack to cool completely.

Prepare the glaze: In a small bowl, whisk together the powdered sugar and 1-2 tablespoons of milk until you achieve a smooth, creamy consistency. Adjust the amount of milk as needed to reach your desired thickness for the glaze.

Glaze the donuts: Once the donuts have cooled completely, either dip the tops into the glaze or use a spoon to drizzle it over the tops for a decorative finish.

Serve & Enjoy: Arrange the glazed mini donuts on a beautiful platter. They can be enjoyed warm or at room temperature for a delightful treat!

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 24 mini donuts

Presentation Tips: For an extra touch, sprinkle a bit of extra pumpkin spice mix or crushed nuts on top of the glaze before it sets. Serve with a warm beverage for a cozy experience!
