1 lb (450g) boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly ground black pepper to taste

4 whole wheat pita pockets

1 cup cherry tomatoes, halved

1 cucumber, diced

1 cup crumbled feta cheese

1/2 red onion, thinly sliced

1/4 cup plain Greek yogurt

2 tablespoons fresh lemon juice

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Fresh parsley, chopped for garnish

Marinate the Chicken: In a mixing bowl, whisk together the olive oil, dried oregano, garlic powder, onion powder, salt, and pepper. Add the chicken breasts to the bowl and ensure they are thoroughly coated with the marinade. Cover and let them marinate in the refrigerator for at least 30 minutes, or up to overnight for deeper flavor.

    Cook the Chicken: Preheat your grill or grill pan to medium-high heat. Place the marinated chicken breasts on the grill and cook for approximately 5-7 minutes per side, or until the chicken reaches an internal temperature of 165°F (75°C). Once cooked, remove from the heat and let the chicken rest for a few minutes before slicing it into thin strips.

      Prepare the Tzatziki Sauce: In a small bowl, mix together the Greek yogurt, fresh lemon juice, chopped dill, and a pinch of salt. Stir until well combined and set aside to let the flavors meld.

        Warm the Pita: While the chicken is grilling, take your pita pockets and warm them.
