4 mini bagels (choose plain or everything-flavored)

4 large eggs

1 cup shredded cheddar cheese (or your favorite cheese blend)

½ cup cherry tomatoes, halved

¼ cup sliced green onions

1 tablespoon olive oil

Salt and freshly ground pepper, to taste

½ teaspoon garlic powder (optional for added flavor)

Fresh parsley or basil for garnish (optional, for a fresh finish)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to prepare for baking the bagel pizzas.

    Prepare the Bagel Bases: Carefully slice each mini bagel in half horizontally. Arrange the bagel halves cut-side up on a baking sheet that is lined with parchment paper. This ensures easy cleanup and prevents sticking.

      Cook the Eggs: In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Crack the eggs into a mixing bowl and whisk them lightly, adding a pinch of salt, pepper, and garlic powder if you desire. Pour the whisked eggs into the hot skillet and scramble, stirring gently until they are just cooked through but still soft and slightly runny, approximately 2-3 minutes. Remove the skillet from the heat once done.

        Assemble the Pizzas: For each bagel half, generously spoon a portion of the scrambled eggs. On top of the eggs, sprinkle a healthy amount of shredded cheddar cheese followed by the halved cherry tomatoes and sliced green onions, distributing them evenly across all bagels.
