Mini Crispy Chicken Caesar Sliders

1 pound boneless, skinless chicken thighs

1 cup buttermilk

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

12 mini slider buns

1 cup romaine lettuce, chopped

½ cup Caesar dressing

Additional grated Parmesan for garnish

Olive oil spray

Prepare the Chicken: In a large mixing bowl, add the chicken thighs and pour the buttermilk over them, ensuring all pieces are fully submerged. Cover the bowl with plastic wrap and refrigerate for a minimum of 1 hour or, for optimal flavor and tenderness, overnight.

    Make the Breading Mixture: In a shallow, wide dish, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, paprika, and a pinch of salt and pepper. Mix thoroughly so that all the dry ingredients are evenly distributed.

      Coat the Chicken: Preheat your oven to 400°F (200°C). Once the chicken has marinated, remove it from the buttermilk, allowing any excess liquid to drip back into the bowl. Dredge each piece of chicken in the breadcrumb mixture, pressing firmly to ensure a good coating on all sides.

        Bake the Chicken: Line a baking sheet with parchment paper and arrange the breaded chicken thighs on it in a single layer. For added crispiness, lightly spray the chicken with olive oil spray. Bake in the preheated oven for 20-25 minutes, or until the chicken is golden brown and the internal temperature reaches 165°F.
