Ingredients

For the Chicken Fajita Filling:

1 lb boneless, skinless chicken breasts, thinly sliced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small red onion, sliced

2 tablespoons olive oil

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper, to taste

Juice of 1 lime

For the Waffles:

1 cup all-purpose flour

1 tablespoon baking powder

1 tablespoon granulated sugar

1/2 teaspoon salt

1 cup buttermilk

1 large egg

1/4 cup melted butter

1/2 cup shredded cheddar cheese (optional)

For Assembly:

Sour cream or Greek yogurt

Fresh cilantro, chopped

Sliced avocado

Salsa or pico de gallo

Instructions

Prepare the Chicken Fajita Filling:

    - In a large mixing bowl, combine the thinly sliced chicken with the red and green bell peppers, red onion, olive oil, chili powder, ground cumin, paprika, and a pinch of salt and pepper. Squeeze the lime juice over the mixture and toss everything together until the chicken and vegetables are evenly coated in spices and oil.

      - Heat a skillet over medium-high heat. Add the chicken and vegetable mixture to the skillet and cook for about 8-10 minutes, stirring occasionally, until the chicken is fully cooked through (no longer pink) and the vegetables are tender but still vibrant. Remove from heat and set aside to cool slightly.

        Make the Waffles:

          - Preheat your waffle maker according to the manufacturer's directions to ensure it reaches the proper temperature.

            - In a large mixing bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and salt until well combined. In a separate bowl, mix the buttermilk, egg, and melted butter until blended.

              - Pour the wet mixture into the dry ingredients and stir gently until just combined (avoid overmixing). If you’d like, fold in shredded cheddar cheese for extra flavor.

                - Lightly coat the waffle maker with cooking spray. Pour approximately 1/2 to 3/4 cup of batter into the preheated waffle maker (amount may vary based on the size of your waffle maker). Cook until the waffles are golden brown and fully cooked (refer to your waffle maker's instructions). Repeat for the remaining batter.

                  Assemble the Wraps:

                    - Once the waffles are cooked, take one waffle and place a generous scoop of the chicken fajita filling on one half. Top with a dollop of sour cream or Greek yogurt, some chopped cilantro, slices of avocado, and a spoonful of salsa.

                      - Fold the waffle over the filling to create a wrap. For an extra crispy texture, you can return the wraps to the waffle maker for about a minute.

                        Serve:

                          - Serve the mini chicken fajita waffle wraps warm, accompanied by extra sour cream and salsa on the side for dipping.
