Ingredients

1 cup cooked, shredded chicken

1 cup assorted bell peppers, thinly sliced (red, green, and yellow for color)

1/2 cup onion, thinly sliced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon garlic powder

Salt and pepper, to taste

1 package (8 ounces) refrigerated pizza dough

1 cup shredded mozzarella cheese

1/4 cup salsa (plus extra for serving)

Fresh cilantro, finely chopped, for garnish

Sour cream, for serving (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.

Cook the Vegetables: In a medium-sized skillet, heat the olive oil over medium heat. Once hot, add the thinly sliced bell peppers and onions. Sauté these for about 5 minutes, or until they are tender and beginning to soften. Next, stir in the shredded chicken along with chili powder, ground cumin, garlic powder, and season generously with salt and pepper. Continue cooking for an additional 3-4 minutes, ensuring everything is well combined and heated through. Once done, remove the skillet from heat and set the mixture aside.

Prepare the Pizza Dough: On a lightly floured surface, roll out the refrigerated pizza dough until it reaches about 1/4 inch in thickness. Use a round cutter or the rim of a glass to cut out circles from the dough, aiming for approximately 3 inches in diameter.

Assemble the Bites: Take half of the dough circles and place a spoonful of the chicken and vegetable mixture in the center of each circle. Sprinkle a small amount of shredded mozzarella cheese over the filling, followed by a dollop of salsa. Place the remaining dough circles on top of the filled ones and gently press down the edges to seal. For an extra decorative touch, you can crimp the edges with a fork.

Bake: Arrange the assembled pizza bites on your prepared baking sheet. For a golden finish, lightly brush the tops with a bit of olive oil. Bake in the preheated oven for 12-15 minutes, or until the bites are golden brown and the cheese has melted beautifully.

Garnish and Serve: Once baked, remove the pizza bites from the oven and let them cool for a few minutes. Just before serving, sprinkle the tops with freshly chopped cilantro. Serve warm, accompanied by extra salsa and a dollop of sour cream if desired.
