Mini Caprese Eggplant Sliders

1 large eggplant, sliced into 1-inch thick rounds

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini)

1/4 cup fresh basil leaves, chopped

2 tablespoons balsamic glaze

1 teaspoon olive oil

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon Italian seasoning

8 small slider buns or mini pita pockets

Prepare the Eggplant: Start by slicing the eggplant into even 1-inch thick rounds. Generously sprinkle salt on both sides of the slices and let them sit in a colander for about 20 minutes. This process will draw out excess moisture and bitterness. After 20 minutes, rinse the eggplant slices under cold water to remove the salt, then pat them dry with paper towels.

    Season the Eggplant: While the eggplant is resting, preheat your grill or grill pan to medium-high heat. Brush both sides of the eggplant slices lightly with olive oil. Then, season them evenly with garlic powder, Italian seasoning, salt, and freshly cracked pepper.

      Grill the Eggplant: Once the grill is hot, place the eggplant slices on it. Grill for approximately 4-5 minutes on each side, or until the slices have clear grill marks and are tender when pierced with a fork. Remove the eggplant from the grill and allow them to cool slightly on a plate.
