4 large eggs

1/4 cup bell pepper, finely chopped

1/4 cup onion, finely chopped

1/4 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil or butter

1/4 avocado, sliced (for serving)

Salsa or hot sauce (for dipping)

Instructions
 

Scrambling the Eggs: Begin by cracking the eggs into a medium-sized mixing bowl. Whisk them together with the salt and black pepper until evenly blended. In a non-stick skillet, heat 1 tablespoon of olive oil or butter over medium heat. Once it's warm, pour the egg mixture into the skillet. Scramble the eggs gently for about 2-3 minutes, or until they are fully cooked but still creamy. When done, remove the skillet from heat.

    Preparing the Filling: Add the crumbled breakfast sausage, chopped bell pepper, and onion to the scrambled eggs in the skillet. Gently fold the ingredients together until they are well combined. Allow the mixture to cool slightly while you prepare the tortillas.

      Assembling the Quesadilla Pockets: Take one flour tortilla and place it flat on a clean surface. Spoon a generous portion of the egg and filling mixture onto half of the tortilla. Sprinkle about a tablespoon of shredded cheese on top of the filling. Carefully fold the tortilla over to create a pocket and press the edges down gently to seal it.

        Cooking the Quesadilla: Reheat the same skillet over medium heat, adding a little more oil or butter if needed.
