Ingredients

3 cups rolled oats

1 cup chopped nuts (choose from walnuts, pecans, or almonds)

1/2 cup seeds (pumpkin seeds or sunflower seeds)

1/2 cup unsweetened shredded coconut

1/2 teaspoon sea salt

1 teaspoon ground cinnamon

1/2 cup pure maple syrup

1/4 cup melted coconut oil

1 teaspoon pure vanilla extract

1/2 cup dried fruit (such as cranberries or raisins, optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 300°F (150°C). Prepare a baking sheet by lining it with parchment paper for easy cleanup.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, pumpkin or sunflower seeds, unsweetened shredded coconut, sea salt, and ground cinnamon. Use a spatula or large spoon to mix thoroughly, ensuring all dry ingredients are distributed evenly.

Combine Wet Ingredients: In a separate bowl, whisk together the pure maple syrup, melted coconut oil, and pure vanilla extract until the mixture is well combined and smooth.

Combine Mixtures: Pour the wet mixture over the dry ingredients, and stir gently but thoroughly until every ingredient is evenly coated with the syrup mixture.

Form Clusters: Transfer the granola mixture onto the prepared baking sheet, spreading it out evenly. Use a spatula to press the mixture firmly together to create large clusters, as this will help the granola hold its shape during baking.

Bake: Carefully place the baking sheet in the preheated oven. Bake for 20-25 minutes, stirring the granola halfway through to promote even cooking. Keep a close eye on it towards the end; remove from the oven when it is golden brown, ensuring it doesn’t burn.

Cool and Add Dried Fruit: After baking, take the granola out of the oven and allow it to cool completely on the baking sheet. This cooling period is essential for creating crunchy clusters. If you are using dried fruit, stir it into the granola once it has cooled down.

Store: When completely cool, break the granola into clusters of your desired size. Transfer the clusters to an airtight container and store at room temperature for up to two weeks, perfect for easy snacking!
