Ingredients

4 medium zucchini

1 cup marinara sauce (ensure it's sugar-free)

1 cup shredded mozzarella cheese

1/2 cup sliced pepperoni (feel free to substitute with preferred toppings: mushrooms, bell peppers, black olives)

1/4 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Olive oil for drizzling

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to ensure it reaches the right temperature for baking.

Prepare the Zucchini: Rinse the zucchini under cool water, then slice each one in half lengthwise. Use a small spoon or melon baller to carefully scoop out the flesh, leaving about 1/4 inch of zucchini around the edges to form a “boat” shape. This will create space for your delicious toppings.

Season the Zucchini: Line a baking sheet with parchment paper for easy cleanup. Place the hollowed zucchini halves on the sheet, cut side up. Lightly drizzle olive oil over the inside of each zucchini half, then season them with salt, pepper, garlic powder, and Italian seasoning to enhance their flavor.

Add Sauce and Toppings: Using a tablespoon, generously spoon about 2 tablespoons of marinara sauce into each zucchini boat, spreading it out evenly. Next, layer on the shredded mozzarella cheese, followed by the sliced pepperoni or any other toppings you choose. Finish with a sprinkle of grated Parmesan cheese on top for added richness.

Bake: Carefully transfer the baking sheet to the preheated oven. Bake the zucchini boats for about 20-25 minutes, or until the zucchini is tender and the cheese has melted to a golden, bubbly perfection.

Garnish and Serve: Once baked, remove the zucchini boats from the oven and let them cool for a few minutes. For an aromatic touch, garnish each boat with fresh basil leaves before serving.

Enjoy: Serve the zucchini pizza boats warm and savor the delightful flavors while enjoying your healthy, low-carb meal!
