4 salmon fillets (approximately 6 oz each)

2 tablespoons olive oil

Juice of 1 fresh lemon (about 2 tablespoons)

Zest of the same lemon (1 tablespoon)

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

2 cloves garlic, minced

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 medium zucchini, sliced into thin rounds

1 red bell pepper, sliced

Lemon slices (for garnish)

Cooking spray or additional olive oil for greasing the foil

Instructions
 

Prepare the Foil: Preheat your grill or oven to 375°F (190°C). Tear off four pieces of aluminum foil, each measuring approximately 12x16 inches. Lightly coat the inside of each piece with cooking spray or a drizzle of olive oil to prevent sticking.

    Mix the Marinade: In a small mixing bowl, combine the olive oil, fresh lemon juice, lemon zest, minced garlic, chopped dill, salt, and pepper. Whisk together until all ingredients are well incorporated.

      Prepare the Vegetables: In a large mixing bowl, add the halved cherry tomatoes, sliced zucchini, and red bell pepper. Drizzle with olive oil, and season with salt and pepper. Toss the vegetables until they are evenly coated with the seasoning.

        Assemble the Foil Packs: Place one salmon fillet at the center of each foil sheet. Spoon about a tablespoon of the lemon-dill marinade over each fillet. Arrange an equal portion of the seasoned vegetable mixture around each piece of salmon.

          Seal the Packs: Carefully fold the sides of the foil over the salmon and vegetables, pinching the edges to create a tightly sealed packet. Make sure there are no holes for steam to escape during cooking.

            Cook: Transfer the foil packs to the preheated grill or place them on a baking sheet in the oven. Cook for approximately 15-20 minutes, or until the salmon is fully cooked and flakes easily with a fork. The internal temperature should reach 145°F (63°C).

              Serve: Once cooked, carefully open the foil packs (taking care to avoid the steam!). Garnish each salmon fillet with additional lemon slices and a sprinkle of fresh dill if desired. You can serve directly in the foil for a rustic presentation or transfer to plates for a colorful and vibrant display.
