1 cup granulated sugar

1/2 cup packed brown sugar

1/2 cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins or dried cranberries (optional)

    Prepare Zucchini: Grate the zucchini using a box grater or a food processor’s grating attachment. Place the grated zucchini in a clean kitchen towel and wring it out over the sink to remove excess moisture. Set it aside to dry further.

      Mix Wet Ingredients: In a large mixing bowl, combine the granulated sugar, brown sugar, and melted butter. Whisk the ingredients together until the mixture is smooth and well blended. Add the eggs one at a time, mixing thoroughly after each addition. Next, incorporate the vanilla extract, lemon zest, and lemon juice until everything is fully combined.

        Combine Dry Ingredients: In a separate bowl, sift or whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg. Make sure there are no lumps, ensuring a uniform dry mixture.
