1 lb (450g) large shrimp, peeled and deveined

3 cloves garlic, finely minced

Zest and juice of 2 large lemons

1/4 cup (60ml) extra virgin olive oil

1 teaspoon smoked paprika

1 teaspoon red pepper flakes (adjust based on spice preference)

Salt and freshly ground black pepper, to taste

1 tablespoon fresh parsley, finely chopped (plus additional for garnish)

1 tablespoon fresh basil, finely chopped (optional)

Skewers (wooden or metal)

Instructions
 

Prep the Skewers: If you are using wooden skewers, be sure to soak them in water for at least 30 minutes. This will help prevent them from catching fire on the grill.

    Marinate the Shrimp: In a large mixing bowl, combine the minced garlic, lemon zest, lemon juice, olive oil, smoked paprika, red pepper flakes, salt, and black pepper. Use a whisk to mix the ingredients until they are well blended. Add the shrimp to the marinade, making sure each piece is thoroughly coated. Cover the bowl with plastic wrap and let the shrimp marinate in the refrigerator for a minimum of 30 minutes, or up to 2 hours for a deeper flavor infusion.

      Assemble Skewers: Once the shrimp has marinated, take them out of the refrigerator. Carefully thread the shrimp onto the skewers. For added flavor and visual appeal, you can intersperse the shrimp with lemon wedges or colorful vegetables like bell peppers and zucchini.
