1 cup orzo pasta

3 cups water (for cooking the orzo)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (any color), diced

1/2 red onion, finely chopped

1/4 cup feta cheese, crumbled (optional)

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

1/4 cup extra virgin olive oil

Juice of 2 lemons (about 1/3 cup)

3 cloves garlic, minced

Salt and pepper, to taste

1/2 teaspoon red pepper flakes (optional, for heat)

Cook the Orzo: In a medium-sized pot, bring 3 cups of water to a rolling boil. Add the orzo pasta and cook for about 8-10 minutes or until it reaches an al dente texture, following the package instructions. Once done, drain the orzo in a colander and rinse it under cold water to stop the cooking process and cool it down quickly. Transfer the orzo to a large mixing bowl and set it aside.

    Prepare the Dressing: In a small mixing bowl, combine the extra virgin olive oil, freshly squeezed lemon juice, minced garlic, and season with salt and pepper to taste.
