Lemon Blueberry Yogurt Bars

1 ½ cups rolled oats

½ cup almond flour

½ cup unsweetened coconut flakes

½ cup honey or maple syrup

1 teaspoon vanilla extract

½ teaspoon salt

1 teaspoon baking powder

2 cups Greek yogurt (plain or vanilla)

Zest of 2 lemons

Juice of 1 lemon

1 cup fresh blueberries (or frozen, thawed)

2 tablespoons poppy seeds (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, ensuring that there is some overhang on the sides for easy removal later.

    Prepare the Crust: In a large mixing bowl, combine the rolled oats, almond flour, coconut flakes, honey (or maple syrup), vanilla extract, salt, and baking powder. Mix thoroughly with a spatula or wooden spoon until the mixture is well combined and has a crumbly texture.

      Assemble the Base: Take half of the oat mixture and evenly press it into the bottom of the prepared baking dish, forming a solid layer. Place the dish in the preheated oven and bake for 10 minutes, or until it turns lightly golden. Once done, remove from the oven and let it cool slightly.

        Make the Yogurt Filling: In a separate mixing bowl, combine the Greek yogurt, lemon zest, lemon juice, and blueberries. If you choose to use them, gently fold in the poppy seeds at this point. Stir well until all ingredients are fully integrated.

          Layer the Yogurt Filling: Carefully pour the yogurt mixture over the cooled oat crust, spreading it out into an even layer. Sprinkle the remaining oat mixture over the top of the yogurt, and press down slightly to help it stick.

            Bake Again: Place the baking dish back in the oven and bake for an additional 20-25 minutes. The filling should be set and the top should be a beautiful golden brown when it's ready.
