4 whole wheat tortillas

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup finely chopped bell peppers (mix of red, yellow, and green)

1 cup finely chopped fresh spinach

1/2 cup sweet corn (fresh, canned, or frozen, thawed if frozen)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 tablespoon olive oil or butter

Salsa and sour cream for dipping (optional)

Instructions
 

Prep the Veggies: Begin by rinsing the bell peppers and spinach under cool water. Finely chop the bell peppers into small pieces and do the same for the spinach. If using frozen corn, ensure it is fully thawed and drained of any excess moisture.

    Mix the Filling: In a large mixing bowl, combine the finely chopped bell peppers, spinach, and sweet corn. Sprinkle in the garlic powder and onion powder, and mix well to ensure an even seasoning. Next, fold in both the shredded cheddar and mozzarella cheeses, stirring until all ingredients are thoroughly combined.

      Heat the Pan: Place a non-stick skillet over medium heat. Add the olive oil or butter and allow it to melt, swirling it around to coat the bottom of the skillet evenly.

        Assemble the Quesadilla: Carefully lay one tortilla flat in the skillet. Spoon 1/4 of the veggie and cheese mixture onto one half of the tortilla, spreading it out evenly. Gently fold the other half of the tortilla over the filling, creating a half-moon shape.

          Cook Until Golden: Let the quesadilla cook for about 3-4 minutes, or until the bottom is golden brown and the cheese begins to melt. Using a spatula, carefully flip the quesadilla to cook the other side for an additional 2-3 minutes until it is also golden and crispy.

            Repeat: Once cooked, remove the quesadilla from the skillet and allow it to cool for a minute before slicing it into triangles. Continue the process with the remaining tortillas and filling, ensuring each quesadilla is cooked to a perfect golden crisp.
