1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 teaspoon freshly cracked black pepper

1/2 cup unsalted butter, cold and cut into small cubes

1 cup sharp cheddar cheese, shredded

1/2 cup fresh jalapeños, diced (seeds removed for a milder flavor)

3/4 cup buttermilk, chilled

1 large egg, beaten (for egg wash)

Preheat the Oven: Set your oven to 425°F (220°C) and prepare a baking sheet by lining it with parchment paper to prevent sticking.

    Combine Dry Ingredients: In a sizable mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and black pepper until they are thoroughly mixed.

      Incorporate the Butter: Add the cold, cubed butter to the dry mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs with some pieces of butter roughly the size of peas remaining.

        Fold in Cheese and Jalapeños: Carefully add the shredded cheddar cheese and diced jalapeños into the flour mixture, gently folding until everything is evenly distributed.

          Mix the Wet Ingredients: In a separate bowl, measure out the chilled buttermilk. Create a small well in the center of the dry ingredients, then pour the buttermilk into that well. Using a spatula, gently stir the mixture until it is just combined; be cautious not to over-mix. The dough should feel slightly sticky.

            Shape the Dough: Transfer the dough to a lightly floured surface and knead gently just 4-5 times until it forms a cohesive dough. Pat it into a rectangle that is about 1-inch thick.
