For the Meatballs:

1 lb ground beef (or turkey)

1/2 cup breadcrumbs

1/4 cup finely chopped onion

2 cloves garlic, minced

1 large egg

2 tablespoons soy sauce

1 tablespoon Worcestershire sauce

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1/2 teaspoon dried oregano

For the Honey Glaze:

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon Dijon mustard

1 teaspoon sesame oil

1 teaspoon freshly grated ginger

1 tablespoon rice vinegar

For the Veggies:

1 bell pepper (any color), cut into 1-inch pieces

1 medium zucchini, sliced into 1/2-inch rounds

1 cup cherry tomatoes

1 medium red onion, cut into wedges

1 tablespoon olive oil

Salt and freshly ground pepper, to taste

For Garnish (optional):

Chopped fresh parsley or cilantro

Toasted sesame seeds

Instructions
 

Make the Meatballs:

    In a large mixing bowl, combine the ground beef (or turkey) with breadcrumbs, chopped onion, minced garlic, egg, soy sauce, Worcestershire sauce, salt, pepper, and dried oregano. Mix gently with your hands until all ingredients are just combined; avoid overmixing to keep meatballs tender. Shape the mixture into small meatballs, about 1 inch in diameter.

      Prepare the Honey Glaze:

        In a small saucepan, add honey, soy sauce, Dijon mustard, sesame oil, grated ginger, and rice vinegar. Whisk these ingredients together over medium heat. Bring the mixture to a gentle simmer, allowing it to cook for about 2-3 minutes, or until it becomes warmed through and slightly thickened. Once ready, remove the glaze from heat and set aside.

          Preheat the Grill:

            Preheat your grill or grill pan to medium heat. While the grill is heating, thread the meatballs onto skewers, alternating with pieces of bell pepper, zucchini slices, cherry tomatoes, and red onion wedges. Aim for an even distribution of ingredients for a balanced flavor in every bite.

              Grill the Skewers:

                Lightly brush the assembled skewers with olive oil and season them with salt and freshly ground pepper. Place the skewers onto the preheated grill and cook for approximately 10-12 minutes, turning them occasionally. The meatballs should be thoroughly cooked, reaching an internal temperature of at least 160°F, while the vegetables should become tender with a nice char. During the last 5 minutes of grilling, generously brush the skewers with the honey glaze.

                  Serve and Garnish:
