3 tablespoons honey

2 tablespoons soy sauce

3 cloves garlic, minced

1 tablespoon fresh lime juice

1 tablespoon fresh cilantro, chopped (for garnish)

For the Summer Slaw:

2 cups green cabbage, thinly sliced

1 cup red cabbage, thinly sliced

1 cup carrots, shredded

1 small red bell pepper, thinly sliced

1/4 cup fresh cilantro, chopped

1/4 cup mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon honey

Salt and pepper, to taste

For the Tacos:

8 small corn or flour tortillas

Lime wedges, for serving

Extra cilantro, for garnish

Prepare the Honey Garlic Sauce: In a medium mixing bowl, combine the honey, soy sauce, minced garlic, olive oil, grated ginger, lime juice, salt, and pepper. Whisk until the ingredients are thoroughly blended and the sauce is smooth. Set aside for later use.

    Marinate the Shrimp: In a ziplock bag or a shallow bowl, place the peeled and deveined shrimp. Pour the prepared honey garlic sauce over the shrimp, ensuring that each piece is evenly coated. Seal the bag or cover the bowl and refrigerate to marinate for at least 15 to 30 minutes to allow the flavors to infuse.

      Make the Summer Slaw: In a large mixing bowl, combine the thinly sliced green cabbage, red cabbage, shredded carrots, red bell pepper, and chopped cilantro. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, and a pinch of salt and pepper to create the dressing. Pour this dressing over the slaw mixture and toss gently to ensure every ingredient is well coated. Set aside to allow the flavors to meld.

        Cook the Shrimp: Heat a large skillet over medium heat. Once the skillet is hot, add the marinated shrimp in a single layer. Cook for 2 to 3 minutes on each side, or until the shrimp are fully cooked, turn opaque, and have a nice glaze from the sauce. Remove the skillet from heat.

          Assemble the Tacos: Warm the tortillas in a dry skillet or microwave until pliable. Garnish with additional chopped cilantro and a drizzle of fresh lime juice to enhance the flavors.
