Ingredients

For the Pork Chops:

4 bone-in pork chops (1-inch thick)

Salt and pepper to taste

2 tablespoons olive oil

1/4 cup honey

1/4 cup soy sauce

4 cloves garlic, minced

1 tablespoon apple cider vinegar

1 teaspoon fresh ginger, grated

1 teaspoon sesame oil

Chopped green onions for garnish (optional)

For the Roasted Potatoes:

1.5 pounds baby potatoes, halved

2 tablespoons olive oil

1 teaspoon dried rosemary

1 teaspoon garlic powder

Salt and pepper to taste

Instructions

Prep the Potatoes:

    - Begin by preheating your oven to 425°F (220°C).

      - In a large mixing bowl, combine the halved baby potatoes. Drizzle with 2 tablespoons of olive oil, then sprinkle with dried rosemary, garlic powder, salt, and pepper. Toss everything together until the potatoes are well coated in the seasonings.

        - Arrange the seasoned potatoes in a single layer on a baking sheet, ensuring they are spread out for even cooking. Roast in the preheated oven for about 25-30 minutes or until they are golden brown and fork-tender, flipping them halfway through for an even roast.

          Prepare the Pork Chops:

            - While the potatoes are roasting, season both sides of the pork chops generously with salt and pepper.

              - In a large skillet, heat the olive oil over medium heat. Once the oil is shimmering, carefully add the pork chops. Sear them for about 4-5 minutes on each side until they develop a beautiful golden-brown crust.

                Make the Honey Garlic Sauce:

                  - In a small bowl, whisk together the honey, soy sauce, minced garlic, apple cider vinegar, grated ginger, and sesame oil until well blended.

                    - Once the pork chops are seared, pour the prepared honey garlic sauce over the chops in the skillet. Reduce the heat to low and let the chops simmer in the sauce, spooning it over them occasionally, for about 5-7 minutes or until the internal temperature reaches 145°F (63°C). The sauce will thicken slightly as it cooks.

                      Combine and Serve:

                        - After the pork chops are done, take them out of the skillet and allow them to rest for a few minutes—this helps retain their juices.

                          - Plate the pork chops alongside the roasted potatoes, drizzling any remaining honey garlic sauce over the top for added flavor.

                            - Optionally, garnish with chopped green onions for a fresh touch and serve immediately.
