1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch pieces

1/4 cup honey

1/4 cup soy sauce

2 tablespoons rice vinegar

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon sesame oil

1 teaspoon red pepper flakes (adjust for spice preference)

1/4 teaspoon black pepper

1 tablespoon cornstarch (optional, for thickening sauce)

Sesame seeds and chopped green onions, for garnish

Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

Marinate the Chicken: In a mixing bowl, combine the honey, soy sauce, rice vinegar, minced garlic, grated ginger, sesame oil, red pepper flakes, and black pepper. Whisk until well blended. Place the chicken pieces into a large zip-top bag or bowl, then pour the marinade over the chicken. Seal the bag or cover the bowl, ensuring all pieces are coated, and refrigerate for a minimum of 30 minutes, up to 4 hours, to enhance flavor.

    Prepare the Grill: Preheat your grill or grill pan to medium heat. If using wooden skewers, ensure they have soaked in water for 30 minutes to prevent burning during grilling.
