Honey Garlic Chicken and Veggie Stir Fry

For the Chicken:

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

3 tablespoons honey

3 tablespoons low-sodium soy sauce

2 tablespoons rice vinegar

3 cloves garlic, finely minced

1 tablespoon fresh ginger, finely minced

1 tablespoon cornstarch

Salt and pepper, to taste

2 tablespoons vegetable oil

For the Vegetables:

1 red or yellow bell pepper, sliced into thin strips

1 cup broccoli florets, washed and trimmed

1 cup snap peas, trimmed

1 medium carrot, julienned

3 green onions, chopped

Sesame seeds, for garnish

For Garnish (optional):

Fresh cilantro or parsley, finely chopped

Instructions
 

Marinate the Chicken:

    In a mixing bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, minced ginger, and cornstarch until smooth. Add the bite-sized chicken pieces to the bowl, tossing to coat them thoroughly in the marinade. Allow the chicken to marinate for at least 15 minutes at room temperature, or refrigerate for up to 1 hour for an enhanced flavor profile.

      Prepare the Vegetables:

        While the chicken marinates, rinse and slice the bell pepper into strips, wash the broccoli and cut it into florets, trim the snap peas, and julienne the carrot. Set the prepared vegetables aside for easy access when cooking.

          Cook the Chicken:

                        Remove the skillet from heat and sprinkle the dish with sesame seeds and chopped green onions for added flavor and crunch.
