Ingredients

For the Turkey Meatballs:

1 pound ground turkey

1/2 cup Italian-style breadcrumbs

1/4 cup freshly grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

1 large egg

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional for a spicy kick)

For the Marinara Sauce:

2 cups marinara sauce (store-bought or homemade)

1/2 teaspoon dried basil

1/2 teaspoon dried oregano

Salt and freshly ground pepper to taste

For Assembly:

4 sub rolls or hoagie buns

1 cup shredded mozzarella cheese

Fresh parsley for garnish (optional)

Instructions

Preheat the oven: Set your oven to 400°F (200°C) for optimal cooking of the meatballs and the sub rolls.

Make the meatballs: In a large mixing bowl, thoroughly combine the ground turkey, breadcrumbs, Parmesan cheese, chopped parsley, egg, minced garlic, onion powder, oregano, salt, black pepper, and red pepper flakes. Mix gently until fully incorporated, taking care not to overmix to ensure a tender texture.

Form the meatballs: Using your hands, shape the turkey mixture into meatballs about 1 1/2 inches in diameter. Aim for around 12 meatballs to have enough for each sub.

Bake the meatballs: Arrange the meatballs on a baking sheet lined with parchment paper or lightly greased. Bake them in the preheated oven for 20-25 minutes, or until they are cooked through and reach an internal temperature of 165°F (74°C).

Prepare the marinara sauce: While the meatballs are baking, pour the marinara sauce into a saucepan and heat over medium heat. Stir in the dried basil and oregano, then season with salt and freshly ground pepper to your taste. Allow the sauce to simmer for about 5 minutes to let the flavors meld.

Combine the meatballs with the sauce: Once the meatballs are fully cooked, carefully transfer them to the saucepan with the marinara sauce. Gently stir to coat the meatballs evenly in the sauce.

Toast the sub rolls: On a separate baking sheet, lay out the sub rolls and place them in the oven. Toast for approximately 5-7 minutes, or until they are golden brown and delightfully crispy.

Assemble the subs: Take each toasted sub roll and place 3 meatballs inside. Generously ladle marinara sauce over the meatballs and top with a generous sprinkle of shredded mozzarella cheese.

Melt the cheese: Put the assembled subs back in the oven for about 5 minutes, or until the mozzarella is melting and starting to bubble enticingly.

Serve: Remove the subs from the oven and, if desired, garnish with fresh parsley for a pop of color. Serve immediately and savor the homestyle goodness of these turkey meatball sub sandwiches!
