1 cup couscous

1 ¼ cups vegetable broth or water

2 tablespoons olive oil

Juice and zest of 1 large lemon

1 teaspoon garlic powder

½ teaspoon salt (or to taste)

¼ teaspoon black pepper

1 cup cherry tomatoes, halved

1 cucumber, diced

½ cup red onion, finely chopped

1 cup fresh parsley, chopped

½ cup feta cheese, crumbled

Optional: ¼ cup Kalamata olives, pitted and halved

Instructions
 

Cook the Couscous: In a medium saucepan, bring the vegetable broth (or water) to a vigorous boil. Once boiling, stir in the couscous. Cover the saucepan with a lid, then remove it from heat. Allow the couscous to sit for about 5 minutes, during which time it will absorb the liquid. Afterward, use a fork to fluff the couscous gently to separate the grains.

    Prepare the Dressing: While the couscous is resting, take a small bowl and combine the olive oil, fresh lemon juice, lemon zest, garlic powder, salt, and black pepper. Whisk the ingredients together until well blended and set the dressing aside to allow the flavors to meld.

      Mix the Ingredients: In a large mixing bowl, combine the fluffed couscous with the halved cherry tomatoes, diced cucumber, finely chopped red onion, and chopped parsley. Drizzle the prepared dressing over the entire mixture and toss everything thoroughly to ensure even distribution of flavors. Taste the salad and adjust seasoning as needed, adding more salt or pepper according to your preference.

        Assemble the Bowls: Prepare individual serving bowls. Spoon the couscous mixture into each bowl, ensuring an even portion in every serving. If using, sprinkle crumbled feta cheese generously on top of each bowl and scatter some halved Kalamata olives for an extra burst of flavor.
