2 medium zucchinis, sliced into thin rounds

1 small eggplant, diced into small cubes

1 red bell pepper, diced

1 cup mushrooms, sliced

1 cup fresh spinach, roughly chopped

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon dried oregano

1 teaspoon dried basil

For the Cheese Mixture:

15 oz ricotta cheese

1 large egg

2 cups shredded mozzarella cheese (divided)

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

For the Sauce:

4 cups marinara sauce (homemade or store-bought)

1 teaspoon red pepper flakes (optional, for added spice)

For Assembly:

9-12 lasagna noodles (no-boil or regular)

Fresh basil leaves for garnish

Instructions
 

Prepare the Veggies:

    - In a large skillet, heat the olive oil over medium heat.

      - Once the oil is hot, add the minced garlic and sauté for about 1 minute or until fragrant.

        - Incorporate the sliced zucchinis, diced eggplant, bell pepper, and mushrooms into the skillet. Cook, stirring occasionally, until the vegetables are wilted and softened (approximately 5-7 minutes).

          - Add the chopped spinach, stirring until it wilts. Season the mixture with salt, pepper, dried oregano, and dried basil. Once combined, remove the skillet from the heat.

            Make the Cheese Mixture:

              - In a medium bowl, combine the ricotta cheese, large egg, 1 cup of shredded mozzarella, and Italian seasoning. Mix until the ingredients are well blended and smooth.

                Prepare the Sauce:

                  - If using store-bought marinara, warm it in a saucepan over low heat. If making homemade, simmer fresh tomatoes, minced garlic, and a selection of Italian herbs in a pot for about 20 minutes to allow the flavors to meld.

                    Assemble the Lasagna:

                      - Preheat your oven to 375°F (190°C).

                              - Top with a final layer of noodles, followed by the rest of the marinara sauce. Sprinkle the remaining mozzarella and grated Parmesan cheese evenly over the top.

                                Bake:

                                  - Cover the lasagna with aluminum foil. For easier removal, spray the foil with a little cooking spray to prevent sticking.

                                    - Bake the covered lasagna in the preheated oven for 25 minutes. After that, carefully remove the foil and bake for an additional 15-20 minutes, or until the cheese on top is bubbly and golden brown. Allow the lasagna to cool for about 10 minutes before slicing.

                                      Serve and Garnish:

                                        - Before serving, garnish each slice with fresh basil leaves. This dish pairs wonderfully with a side salad or a slice of garlic bread!
