2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, sliced

2 stalks celery, chopped

1 medium potato, diced

1 zucchini, diced

1 red bell pepper, chopped

1 cup green beans, trimmed and cut into 1-inch pieces

1 can (14.5 oz) diced tomatoes, with juice

6 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon dried oregano

½ teaspoon smoked paprika

Salt and pepper, to taste

1 cup fresh spinach or kale

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion and sauté for about 5 minutes until it becomes soft and translucent.

    Add Garlic: Stir in the minced garlic and cook for an additional 1 minute, or until fragrant, being careful not to let it burn.

      Incorporate Vegetables: Add the sliced carrots and chopped celery to the pot. Cook for another 5 minutes, stirring occasionally until the vegetables start to soften.

        Mix in Remaining Veggies: Incorporate the diced potato, zucchini, red bell pepper, and green beans. Mix everything well and continue to sauté for another 5 minutes to allow the flavors to combine.

          Add Tomatoes and Broth: Pour in the diced tomatoes along with their juice and the vegetable broth. Stir everything together until well combined.

            Season and Simmer: Season the soup with dried thyme, oregano, smoked paprika, salt, and pepper. Increase the heat to bring the mixture to a boil, then reduce the heat to low, allowing it to simmer gently for about 25 minutes. This will help the vegetables soften and the flavors meld beautifully.

              Add Greens: Just before serving, stir in the fresh spinach or kale. Cook for a few minutes until the greens are wilted and tender.
