Ingredients

1 cup green or brown lentils, thoroughly rinsed

3 cups vegetable broth

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or green), diced

2 teaspoons smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

1 cup barbecue sauce (store-bought or homemade)

1 tablespoon apple cider vinegar

Salt and pepper, to taste

4 whole wheat hamburger buns

Fresh cilantro or parsley, for garnish (optional)

Instructions

Cook the Lentils: In a medium pot, combine the rinsed lentils with the vegetable broth. Bring to a vigorous boil, then reduce the heat to low, covering the pot partially. Simmer uncovered for about 20-25 minutes, or until the lentils are tender but not mushy. If any liquid remains, drain it and set the lentils aside.

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and cook for approximately 5 minutes, stirring often, until the onion becomes translucent and soft. Add the minced garlic and continue cooking for another minute, allowing the garlic to become fragrant.

Incorporate Bell Pepper and Spices: Stir in the diced bell pepper and sauté for another 3-4 minutes until it becomes tender. Sprinkle in the smoked paprika, ground cumin, and chili powder, mixing well to coat the vegetables in the spices.

Combine Lentils and Seasoning: Add the cooked lentils to the skillet with the sautéed vegetables. Pour in the barbecue sauce along with the apple cider vinegar, stirring everything together to ensure an even mix. Allow this to simmer for an additional 5-7 minutes, letting the flavors meld. Taste and season with salt and pepper as needed.

Prepare the Buns: While the lentil mixture is simmering, toast the whole wheat hamburger buns lightly in the oven (at 350°F for about 5-7 minutes) or on a skillet until golden brown.

Assemble the Sloppy Joes: Spoon a generous serving of the hearty lentil mixture onto the bottom half of each toasted bun. If desired, top with fresh cilantro or parsley for an extra burst of flavor and color. Place the top bun over the filling to complete the assembly.

Serve and Enjoy: Serve your Hearty Barbecue Lentil Sloppy Joes immediately with your choice of sides, such as crispy sweet potato fries or a vibrant fresh salad.
