Healthy Turkey and Sweet Potato Shepherd's Pie

1 lb (450g) ground turkey

1 medium onion, diced

2 cloves garlic, minced

2 cups carrots, diced

1 cup frozen peas

1 cup low-sodium chicken broth

1 tablespoon tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 tablespoon olive oil

For the Sweet Potato Mash:

2 large sweet potatoes, peeled and cubed

1/4 cup milk (or almond milk for a dairy-free option)

2 tablespoons butter (or coconut oil for a dairy-free option)

Salt and pepper to taste

1/2 teaspoon cinnamon (optional for added warmth)

Instructions
 

Prepare the Sweet Potatoes:

    - Fill a large pot with water and bring it to a rolling boil. Carefully add the cubed sweet potatoes. Cook them for 15-20 minutes, or until they can be easily pierced with a fork. Once tender, drain the sweet potatoes and return them to the pot.

      Mash the Sweet Potatoes:

        - Pour in the milk and add in the butter (or coconut oil) to the drained sweet potatoes. Using a potato masher, mash until the mixture is smooth and creamy. Season with salt, pepper, and cinnamon (if using). Set the mash aside for later use.

          Cook the Turkey Filling:

            - In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until it becomes translucent, approximately 3-4 minutes.

              - Incorporate the minced garlic and cook for an additional minute, stirring frequently until fragrant.

                - Introduce the ground turkey to the skillet, breaking it apart with a spatula. Cook until it's browned and fully cooked through, about 5-7 minutes.

                  - Stir in the diced carrots, frozen peas, chicken broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Bring the mixture to a gentle simmer and allow it to cook for about 10 minutes, or until it thickens slightly.

                    Assemble the Shepherd's Pie:

                      - Preheat your oven to 400°F (200°C).

                        - In a greased large baking dish, evenly layer the cooked turkey mixture as the bottom layer. Top it with the sweet potato mash, spreading it evenly over the entire surface.

                          Bake:

                            - Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the sweet potato topping is lightly golden and the edges are bubbly.

                              Serve:
