1 cup unsweetened Greek yogurt

2 ripe bananas, mashed until smooth

2 large eggs

1/4 cup honey or pure maple syrup

1 scoop vanilla protein powder

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

1 cup fresh or frozen blueberries (do not thaw if using frozen)

Optional: 1/4 cup chopped nuts (e.g. walnuts or pecans)

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or lightly greasing it with cooking spray.

    Mix Dry Ingredients: In a medium-sized mixing bowl, combine the rolled oats, protein powder, baking powder, baking soda, salt, and ground cinnamon. Whisk these ingredients together thoroughly to ensure they are well mixed.

      Combine Wet Ingredients: In a larger bowl, add the Greek yogurt, mashed bananas, eggs, and honey or maple syrup. Use a whisk to blend these ingredients until the mixture is smooth and well-combined.

        Incorporate Dry into Wet: Gradually add the dry mixture to the wet ingredients. Stir gently until just combined; avoid overmixing to ensure your muffins remain tender.
