2 large eggs

½ cup unsweetened applesauce

¼ cup Greek yogurt (or plant-based yogurt for a vegan option)

¼ cup honey or maple syrup

1 teaspoon vanilla extract

1 large apple, peeled, cored, and diced (Granny Smith or Honeycrisp are excellent choices)
