Ingredients

1 pound ground beef or turkey

1 can (4 ounces) diced Hatch green chiles, drained

1 small onion, finely chopped

1 teaspoon garlic powder

1 teaspoon ground cumin

1 teaspoon chili powder

1 tablespoon olive oil

Salt and freshly ground black pepper, to taste

12 small flour tortillas (or mini taco cups)

1 cup shredded sharp cheddar cheese

1 cup shredded lettuce

1 cup diced fresh tomatoes

½ cup sour cream or Greek yogurt (for a healthier option)

1 avocado, diced

Fresh cilantro, chopped (for garnish, optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). This ensures that it reaches the ideal temperature for crisping the taco cups.

Cook the Meat: In a large skillet, heat the olive oil over medium heat. Once hot, add the finely chopped onion and sauté for about 3-4 minutes, or until it becomes translucent and softened. Next, add the ground beef (or turkey), using a spatula to break it apart. Cook until browned and fully cooked through, approximately 6-8 minutes.

Add Seasonings: Once the meat is cooked, drain any excess fat from the skillet. Stir in the drained Hatch green chiles, garlic powder, ground cumin, chili powder, and a sprinkle of salt and pepper. Mix everything thoroughly and let this mixture simmer for an additional 2-3 minutes, allowing the flavors to meld beautifully. Remove from heat.

Prepare Taco Cups: Lightly grease a muffin tin with cooking spray or a drizzle of olive oil to prevent sticking. Take each tortilla and gently press it into the muffin tin, forming a cup shape. For smaller tortillas, consider folding them into quarters and arranging them accordingly to fit.

Fill the Cups: Using a spoon, fill each tortilla cup with a generous amount of the chili mixture, ensuring they are filled about 3/4 of the way. Top each filled cup with a sprinkle of shredded cheddar cheese for added flavor and richness.

Bake the Cups: Place the muffin tin in the preheated oven and bake for 10-12 minutes, or until the tortillas are crispy and the cheese is melted and bubbly. Keep an eye on them to achieve a perfect golden brown.

Garnish and Serve: Once baked, carefully remove the taco cups from the muffin tin while they are still warm. After allowing them to cool slightly, top each one with a handful of shredded lettuce, a few diced tomatoes, and a generous scoop of diced avocado. Finish each cup with a dollop of sour cream or Greek yogurt and sprinkle with fresh cilantro if desired.

Enjoy: Serve these delightful Hatch Green Chili Taco Cups warm as a tasty appetizer or as a satisfying main dish, perfect for gatherings or family meals!
