1 lb boneless, skinless chicken thighs

2 cups hatch green chilies, roasted and finely chopped (using fresh or canned)

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon freshly cracked black pepper

Juice of 1 fresh lime

12 small corn tortillas

1 cup queso fresco, crumbled

1 cup fresh cilantro, chopped

1 ripe avocado, diced

Prepare the Chicken: Begin by patting the chicken thighs dry with paper towels. Cut them into bite-sized pieces to ensure even cooking during sautéing.

    Marinate: In a medium mixing bowl, combine the chopped hatch green chilies, minced garlic, olive oil, ground cumin, smoked paprika, salt, pepper, and the juice of one lime. Add the chicken pieces to this mixture and stir until all the chicken is evenly coated in the marinade. Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes; for optimal flavor, a marination time of up to 2 hours is recommended.

      Cook the Chicken: Heat a large skillet over medium-high heat. Once the skillet is hot, add the marinated chicken to the pan in an even layer.
