Ingredients

4 tablespoons almond flour

2 tablespoons unsweetened cocoa powder

1 tablespoon coconut sugar (or your preferred sweetener)

1/4 teaspoon baking powder

Pinch of salt

1 tablespoon unsweetened applesauce

2 tablespoons milk of your choice (almond, oat, or cow's milk)

1/4 teaspoon vanilla extract

Optional: 1 tablespoon dark chocolate chips (preferably at least 70% cocoa for lower sugar)

Instructions

Mix Dry Ingredients: In a microwave-safe mug, which should have a capacity of about 12 oz, combine the almond flour, cocoa powder, coconut sugar, baking powder, and a pinch of salt. Stir the mixture thoroughly until all the dry ingredients are uniformly blended, ensuring there are no clumps.

Add Wet Ingredients: Next, pour in the unsweetened applesauce, your choice of milk, and the vanilla extract directly into the same mug. Mix well until the batter is smooth and free of lumps. At this point, if you are using them, gently fold in the dark chocolate chips, making sure they are evenly distributed throughout the batter.

Microwave: Carefully place the mug in the microwave. Cook on high for about 1 minute to 1 minute and 15 seconds. Keep in mind that microwave wattages vary, so start checking the cake at the 1-minute mark. The cake is done when it feels firm to the touch but still has a soft center.

Cool & Serve: After cooking, remove the mug from the microwave (it will be hot!). Allow it to cool for about 1 to 2 minutes. You can enjoy the cake straight from the mug for a casual dessert or gently invert it onto a plate for a more sophisticated presentation.

Garnish (Optional): For an extra touch, consider garnishing your mug cake with a dollop of creamy Greek yogurt, a sprinkle of chopped walnuts, or a light drizzle of honey for added flavor.
