Ingredients

4 cups seedless watermelon, cut into 1-inch cubes

1 cup feta cheese, crumbled

12 fresh mint leaves

2 tablespoons balsamic glaze

1 tablespoon olive oil

Salt and black pepper, to taste

12 wooden or metal skewers

Instructions

Soak Skewers (if using wood): If you opt for wooden skewers, immerse them in water for approximately 30 minutes. This will help to prevent burning while grilling.

Prepare Ingredients: On a clean cutting board, chop the watermelon into 1-inch cubes. Next, crumble the feta cheese into a bowl, ensuring it’s in manageable pieces for easy assembly.

Assemble the Skewers: Take a skewer and begin by threading on a watermelon cube, followed by a fresh mint leaf, and then a piece of feta. Repeat this pattern, alternating each ingredient, until the skewer is filled, leaving about an inch of space at both ends to allow for easy handling. Aim for 3-4 pieces of watermelon, mint, and feta per skewer for optimal flavor balance.

Season the Skewers: Lightly brush the assembled skewers with olive oil, and sprinkle them generously with salt and black pepper for enhanced flavor.

Preheat the Grill: Preheat your grill or grill pan to medium-high heat. This ensures proper searing and caramelization of the watermelon.

Grill the Skewers: Carefully place the skewers onto the heated grill. Allow them to cook for about 2-3 minutes on each side, or until you see beautiful grill marks and the watermelon begins to caramelize slightly.

Drizzle with Balsamic: Once grilled, remove the skewers from the grill. While they are still hot, drizzle them generously with balsamic glaze for a sweet, tangy finish.

Serve: Arrange the skewers artfully on a serving platter. For an added touch, garnish the dish with extra fresh mint leaves. Serve immediately as a delightful appetizer or refreshing side dish.
