1 large zucchini, sliced into ¼-inch rounds

1 red bell pepper, cut into strips

1 yellow bell pepper, cut into strips

1 cup mushrooms, sliced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

4 slices of whole-grain bread

1 cup hummus (store-bought or homemade)

A handful of fresh spinach leaves

½ cup feta cheese, crumbled (optional)

Balsamic glaze for drizzling (optional)

Marinate the Vegetables: In a large mixing bowl, combine the sliced zucchini, red and yellow bell peppers, and mushrooms. Drizzle with olive oil, then season with salt, pepper, dried oregano, and garlic powder. Toss the vegetables until they are evenly coated with the marinade. Allow the mixture to sit for about 15-20 minutes to let the flavors meld.

    Grill the Vegetables: Preheat your grill or grill pan to medium-high heat. Carefully transfer the marinated vegetables to the grill and cook for approximately 5-7 minutes, turning occasionally. Grill until the vegetables are tender and feature beautiful grill marks. Once cooked, remove them from the heat and set aside.

      Assemble the Sandwich: Take four slices of whole-grain bread and generously spread hummus on one side of each slice. On two of the slices, layer the grilled vegetables evenly.
