Skewers (if using wooden skewers, soak in water for 30 minutes to prevent burning)

For the Pineapple Salsa:

1 cup fresh pineapple, finely diced

1/2 red bell pepper, diced

1/4 red onion, finely chopped

1 small jalapeño, seeds removed and minced

1/4 cup fresh cilantro, finely chopped

1 tablespoon fresh lime juice

Sea salt, to taste

Marinate the Shrimp: In a large mixing bowl, whisk together the olive oil, fresh lime juice, minced garlic, smoked paprika, ground cumin, sea salt, and freshly cracked black pepper until well combined. Add the peeled and deveined shrimp to the bowl, ensuring each piece is thoroughly coated. Cover with plastic wrap and refrigerate to marinate for at least 30 minutes, or up to 1 hour for optimal flavor absorption.

    Prepare the Pineapple Salsa: In another bowl, combine the diced fresh pineapple, chopped red bell pepper, finely chopped red onion, minced jalapeño, and chopped cilantro.
