Ingredients

For the Shrimp Marinade:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 tablespoons fresh lime juice

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon sea salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (optional, for some heat)

2 tablespoons fresh cilantro, finely chopped

For the Tacos:

8 small corn tortillas

1 cup red cabbage, finely shredded

1 avocado, sliced

½ cup cherry tomatoes, halved

¼ cup red onion, thinly sliced

1 jalapeño, sliced (optional, for some heat)

Lime wedges, for serving

For the Creamy Cilantro Sauce:

½ cup Greek yogurt or sour cream

¼ cup fresh cilantro, finely chopped

1 tablespoon lime juice

1 clove garlic, minced

Salt and pepper, to taste

Instructions

Marinate the Shrimp: In a mixing bowl, whisk together the olive oil, lime juice, smoked paprika, ground cumin, garlic powder, sea salt, black pepper, and cayenne pepper if you like it spicy. Add the shrimp to the marinade and toss until they are well coated. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.

Prepare the Creamy Cilantro Sauce: In a separate small bowl, mix together the Greek yogurt (or sour cream), chopped cilantro, lime juice, minced garlic, and a pinch of salt and pepper. Stir until smooth and creamy. Set aside to let the flavors combine.

Grill the Shrimp: Preheat your grill or grill pan over medium-high heat. If using skewers, thread the marinated shrimp onto them for easier handling. Grill the shrimp for about 2-3 minutes on each side, cooking until they turn pink and opaque.

Warm the Tortillas: As the shrimp grill, warm the corn tortillas on the grill for about 20-30 seconds on each side until they become pliable and get slight grill marks.

Assemble the Tacos: On each tortilla, evenly distribute the grilled shrimp. Top them with the shredded red cabbage, avocado slices, halved cherry tomatoes, thinly sliced red onion, and jalapeño slices, if using.

Drizzle the Sauce: Generously drizzle the creamy cilantro sauce over the assembled tacos to add a rich flavor.

Serve: Serve the tacos immediately while they're warm, with lime wedges on the side for an extra squeeze of freshness.
