Ingredients

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and black pepper, to taste

6 cups mixed salad greens (including spinach, arugula, and romaine)

1 cup cherry tomatoes, halved

1 ripe avocado, diced

4 slices of bacon, cooked until crispy and crumbled

1 cup blue cheese, crumbled

3 hard-boiled eggs, peeled and diced

Juice of 1 fresh lemon

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

1/4 cup extra virgin olive oil

Additional salt and pepper, to taste

Instructions

Prepare the Shrimp: In a medium mixing bowl, combine the peeled and deveined shrimp with olive oil, smoked paprika, garlic powder, salt, and black pepper. Toss the mixture gently to ensure each shrimp is well-coated with the marinade. Allow the shrimp to marinate for approximately 15 minutes at room temperature for maximum flavor.

Grill the Shrimp: Preheat your grill to medium-high heat. If using skewers, thread the marinated shrimp onto them, ensuring they’re spaced apart for even cooking. Alternatively, you can place the shrimp directly on the grill grates. Grill the shrimp for about 2-3 minutes per side, or until they turn pink and opaque (indicating they are cooked through). Once done, remove the shrimp from the grill and set aside to rest.

Make the Dressing: In a small bowl, whisk together the juice of one lemon, apple cider vinegar, Dijon mustard, extra virgin olive oil, and a pinch of salt and pepper. Continue whisking until the dressing is emulsified and well combined. Adjust seasoning if necessary.

Prepare the Salad Base: In a large serving bowl, create a vibrant layer of mixed salad greens. Add the halved cherry tomatoes, diced avocado, crumbled bacon, blue cheese, and diced hard-boiled eggs, arranging them artfully for a beautiful presentation.

Add the Grilled Shrimp: Nestle the grilled shrimp on top of the salad, evenly distributing them for a burst of flavor in each bite.

Dress the Salad: Just before serving, drizzle the dressing over the salad, using all the dressing for maximum flavor. Toss the salad gently to ensure all ingredients are coated without breaking the delicate greens.

Serve: Serve the salad immediately while the shrimp are warm. For an extra touch, garnish with additional crumbled blue cheese and freshly cracked black pepper. Enjoy your refreshing and flavorful Grilled Shrimp Cobb Salad!
