Ingredients

4 ripe peaches, halved and pitted

8 ounces burrata cheese

4 cups baby arugula or baby spinach

1/4 cup balsamic glaze

1/4 cup extra virgin olive oil, plus more for grilling

1/4 cup toasted pecans or walnuts, roughly chopped

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish

Instructions

Preheat the Grill: Begin by heating your grill to medium-high, approximately 400°F (200°C), ensuring it's hot enough for grilling the peaches.

Grill the Peaches: Lightly brush the cut sides of the peach halves with a small amount of olive oil to prevent sticking. Place the peaches cut-side down on the grill grates. Grill for about 4-5 minutes, or until grill marks appear and the peaches become slightly tender. Once done, carefully remove them from the grill and allow them to cool for a few minutes before slicing into wedges.

Prepare the Salad Base: In a large mixing bowl, add the baby arugula or spinach. Drizzle with the remaining extra virgin olive oil, then season with a pinch of salt and freshly ground black pepper. Toss gently to coat the greens evenly.

Assemble the Salad: On a large serving platter or individual plates, create a bed of the dressed arugula. Arrange the grilled peach wedges aesthetically across the greens. Tear the burrata into large pieces and distribute them generously among the peaches for a creamy texture.

Add the Finishing Touches: Drizzle the balsamic glaze evenly over the salad, creating an enticing appearance. Sprinkle the toasted nuts over the top for added crunch, and finish off with fresh basil leaves scattered throughout for a fragrant touch.

Serve: Enjoy this delightful salad immediately for the best flavor and texture. For an extra treat, consider serving with slices of crusty bread to enjoy alongside.
