2 ripe ears of corn, husked

2 ripe avocados, diced

1 medium red onion, finely chopped

1 cup cherry tomatoes, halved

Juice of 2 limes

1 tablespoon extra virgin olive oil

1 teaspoon smoked paprika

Grill the Corn: Begin by preheating your grill to medium-high heat. Once hot, place the husked corn directly on the grill grates. Grill the corn for approximately 10-12 minutes, turning the ears occasionally until they develop a nice char and become tender. Once cooked, carefully remove the corn from the grill and set it aside to cool.

    Cut the Corn Off the Cob: After the corn has cooled enough to handle, use a sharp knife to carefully slice the kernels off the cob. Place the fresh corn kernels into a large mixing bowl.

      Combine the Ingredients: To the bowl with the grilled corn, add the diced avocados, finely chopped red onion, halved cherry tomatoes, minced jalapeño, and chopped cilantro. The vibrant colors will create a beautiful and appetizing mix!
