1 lb boneless, skinless chicken breasts

1 cup cherry tomatoes, halved

1 cucumber, diced

1 cup Kalamata olives, pitted and sliced

1/2 red onion, thinly sliced

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

Juice of 1 lemon (about 2 tablespoons)

1/4 cup red wine vinegar

1/2 teaspoon garlic powder

1/2 teaspoon black pepper

Cook the Pasta: Fill a large pot with water and add a generous pinch of salt. Bring it to a boil. Once boiling, add the rotini or penne pasta. Cook according to the package directions until al dente, typically around 8-10 minutes. Drain the pasta and rinse it under cold water to stop the cooking process. Set aside to cool completely.

    Prepare the Chicken: In a medium mixing bowl, combine 2 tablespoons of olive oil, dried oregano, a pinch of salt, and black pepper. Mix well until combined. Coat the chicken breasts thoroughly with this marinade and let them sit at room temperature for at least 15 minutes to absorb the flavors.
