Ingredients

For the Chicken Marinade:

500g chicken breast, cut into bite-sized pieces

200g plain yogurt

1 tablespoon fresh lemon juice

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon garam masala

1 teaspoon chili powder

Salt and pepper, to taste

For the Sauce:

2 tablespoons vegetable oil

1 large onion, finely chopped

4 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 green chili, finely chopped (optional, adjust for desired heat level)

2 teaspoons ground coriander

2 teaspoons ground cumin

1 teaspoon garam masala

1 teaspoon turmeric powder

400g canned crushed tomatoes

200ml coconut milk or heavy cream

Fresh cilantro, for garnish

Salt, to taste

Cooked basmati rice or naan, for serving

Instructions

Marinate the Chicken: In a large mixing bowl, whisk together the yogurt, lemon juice, ground cumin, ground coriander, garam masala, chili powder, salt, and pepper. Add the chicken pieces to the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, but ideal marination is overnight for best flavor.

Prepare the Sauce: In a large saucepan or deep skillet, heat the vegetable oil over medium heat. Add the finely chopped onion and sauté until it becomes golden and translucent, which should take about 5-7 minutes.

Add Aromatics: Incorporate the minced garlic, minced ginger, and the chopped green chili (if you want some heat) into the pan. Sauté for another 1-2 minutes until aromatic and fragrant.

Spice It Up: Into the mixture, add the ground coriander, ground cumin, garam masala, and turmeric powder. Stir well to toast the spices, cooking them for about 1 minute until they release their fragrances.

Create the Tomato Base: Pour the canned crushed tomatoes into the pan and season with salt. Mix thoroughly to combine all ingredients. Allow the sauce to simmer gently for about 10 minutes, stirring occasionally, which will help the flavors develop and the sauce to thicken slightly.

Cook the Chicken: While your sauce is simmering, preheat a grill pan or regular skillet over medium-high heat. Remove the marinated chicken from the refrigerator, letting any excess marinade drip off, and add the chicken to the hot pan. Cook for about 5-7 minutes or until the chicken is well browned and cooked through, turning pieces occasionally for an even sear.

Combine Chicken and Sauce: Once the chicken is cooked, add it to the simmering sauce. Gently stir in the coconut milk or heavy cream, and taste to adjust salt if needed. Allow the mixture to simmer for an additional 5-10 minutes, ensuring everything is well combined and heated through.

Garnish and Serve: Serve the chicken tikka masala hot, garnished with freshly chopped cilantro. Pair it with basmati rice or warm naan bread to soak up the flavorful sauce.
