Preheat the Oven: Begin by preheating your oven to 400°F (200°C). To facilitate an easy cleanup later, line two baking sheets with parchment paper.

    Prepare the Sweet Potatoes: Rinse the sweet potatoes under cold water and scrub them well. After drying them with a kitchen towel, use a sharp knife or a mandoline slicer to cut the sweet potatoes into thin slices, aiming for about 1/8 inch in thickness. Remember, thinner slices yield crispier chips!

      Toss with Oils and Seasoning: In a large mixing bowl, combine the sweet potato slices with the olive oil and sesame oil. Toss them thoroughly to ensure each piece is well coated. Next, sprinkle in the sesame seeds, sea salt, garlic powder (if using), smoked paprika (if desired), and freshly cracked black pepper. Toss again until all the ingredients are evenly distributed.
