Ingredients

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 tablespoon poppy seeds

½ cup unsalted butter, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

Zest of 2 lemons

⅓ cup freshly squeezed lemon juice

½ cup buttermilk

For the Glaze:

1 cup powdered sugar

2 tablespoons lemon juice

Instructions

Preheat the Oven: Set your oven temperature to 350°F (175°C). Prepare a 9x5-inch loaf pan by greasing it with butter or cooking spray, then line it with parchment paper, ensuring that some of the paper hangs over the edges for easy loaf removal.

Prepare the Dry Ingredients: In a medium mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, and poppy seeds. Whisk the mixture until it is well-blended, then set the bowl aside.

Cream Butter and Sugar: In a large mixing bowl, use an electric mixer on medium speed to beat the softened unsalted butter with the granulated sugar until the mixture is light, fluffy, and pale in color. This should take about 3 to 5 minutes.

Incorporate Eggs and Flavoring: Crack the eggs into the butter mixture one at a time, thoroughly mixing after each addition to ensure they are fully incorporated. Next, add the vanilla extract, lemon zest, and freshly squeezed lemon juice. Continue mixing until everything is well-combined.

Combine Dry and Wet Ingredients: Gradually incorporate the dry ingredient mixture into the wet mixture. Add the buttermilk in between additions of the dry ingredients. Start and end with the dry ingredients to maintain the mixture’s texture. Stir gently until just combined; avoid overmixing to keep the loaf tender.

Bake the Loaf: Pour the prepared batter into your lined loaf pan, using a spatula to smooth the top. Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean with just a few crumbs attached.

Cool the Loaf: Once baked, carefully remove the loaf from the oven and allow it to cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely before glazing.

Prepare the Glaze: In a small bowl, whisk together the powdered sugar and lemon juice until you achieve a smooth consistency. Adjust the thickness by adding more lemon juice (if it’s too thick) or more powdered sugar (if it’s too thin) until desired.

Glaze the Loaf: After the loaf has completely cooled, drizzle the glaze generously over the top, letting it cascade down the sides for an attractive finish.

Serve and Enjoy: Slice into the moist, zesty loaf and serve with your favorite cup of tea or coffee for a delightful experience!
