Gingerbread Energy Bites

Ingredients
  

1 cup rolled oats

1/2 cup almond butter (or your preferred nut butter)

1/4 cup honey or maple syrup

1/2 cup ground gingerbread spices (mix of cinnamon, ginger, nutmeg, and allspice)

1/4 cup molasses

1/4 cup chopped nuts (such as walnuts, pecans, or almonds)

1/4 cup unsweetened shredded coconut

1/4 cup mini dark chocolate chips (optional)

Pinch of salt

Optional: splash of vanilla extract for added flavor

Instructions
 

In a large mixing bowl, thoroughly combine the rolled oats and ground gingerbread spices. Stir them together until the spices are evenly distributed throughout the oats.

    In a separate medium-sized bowl, whisk together the almond butter, honey or maple syrup, molasses, and splash of vanilla extract (if you’re using it). Mix until you achieve a smooth, cohesive blend.

      Carefully pour the wet mixture into the bowl with the oats and spices. Stir the mixture until all of the dry ingredients are fully coated and the ingredients are well combined.

        Gently fold in the chopped nuts, unsweetened shredded coconut, and mini dark chocolate chips (if you’re including them). Ensure that all ingredients are evenly mixed throughout the batter.

          Once everything is incorporated, use your hands to take small portions of the mixture and roll them into balls, each about 1 inch in diameter. If needed, wet your hands slightly to help reduce sticking.

            Carefully place the formed energy bites onto a parchment-lined baking sheet or a large plate, spacing them out to prevent them from sticking together.

              Once you’ve shaped all the bites, transfer them to the refrigerator and let them chill for a minimum of 30 minutes. This will help them firm up.

                For storage, keep the energy bites in an airtight container in the refrigerator for up to a week. If you'd like to save them for longer, you can also freeze them.
