Garlic Parmesan Sweet Potato Spirals

2 large sweet potatoes

3 tablespoons olive oil

4 cloves garlic, finely minced

1/2 teaspoon smoked paprika

1/4 teaspoon freshly ground black pepper

1 teaspoon sea salt

1/2 cup freshly grated Parmesan cheese

Fresh parsley, finely chopped (for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). To make cleanup easier, line a baking sheet with parchment paper.

    Prepare the Sweet Potatoes: Use a spiralizer to cut the sweet potatoes into long, curly spirals. If you don’t have a spiralizer, a vegetable peeler can be used to create thin, ribbon-like strips.

      Make the Garlic Mixture: In a small mixing bowl, combine the olive oil, minced garlic, smoked paprika, black pepper, and sea salt. Stir until the ingredients are well blended.

        Combine: In a large mixing bowl, add the sweet potato spirals and pour the garlic mixture over them. Gently toss the spirals until each piece is evenly coated with the flavorful mixture.

          Roast: Spread the sweet potato spirals out evenly on the prepared baking sheet, making sure not to overcrowd them. Bake in the preheated oven for 15 minutes, allowing the spirals to soften slightly.

            Add Cheese: After 15 minutes, carefully take the baking sheet out of the oven and sprinkle the freshly grated Parmesan cheese evenly over the sweet potato spirals.

              Finish Roasting: Place the baking sheet back in the oven and bake for an additional 10 minutes, or until the spirals are tender and the cheese has melted and turned golden brown.

                Garnish and Serve: Once done, remove the baking sheet from the oven and let the spirals cool for a couple of minutes. Garnish with a generous sprinkling of freshly chopped parsley before serving them warm as an exquisite side dish or a wholesome snack.
