Ingredients

4 bone-in, skin-on chicken thighs

1 cup freshly grated Parmesan cheese

1 cup panko breadcrumbs

4 cloves of garlic, finely minced

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon freshly cracked black pepper

2 tablespoons extra virgin olive oil

2 tablespoons unsalted butter, melted

Fresh parsley, finely chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). This high temperature is essential to achieving a crispy crust on the chicken.

Prepare the Crust Mixture: In a medium mixing bowl, combine the grated Parmesan cheese, panko breadcrumbs, minced garlic, garlic powder, onion powder, thyme, smoked paprika, salt, and black pepper. Stir well until all ingredients are thoroughly blended, creating a uniform mixture.

Prep the Chicken: Using paper towels, pat the chicken thighs dry to remove excess moisture. This helps to ensure the skin crisps up beautifully. Place the chicken thighs, skin-side up, on a baking sheet that has been lined with parchment paper for easy cleanup.

Make the Garlic Butter Mixture: In a small bowl, whisk together the olive oil and melted butter until fully combined. This aromatic mix will provide flavor and help the crust adhere to the chicken.

Coat the Chicken: Generously brush the garlic butter mixture over the skin of each chicken thigh. Be sure to coat them evenly so that the breadcrumb mixture will stick effectively.

Apply the Crust: Evenly press the breadcrumb and Parmesan mixture onto the chicken thighs, ensuring each piece is thoroughly covered. The coating should adhere well to the butter and oil mixture.

Bake: Carefully place the baking sheet in the preheated oven. Bake the chicken thighs for approximately 35-40 minutes. They are ready when the internal temperature reads 165°F (75°C) and the crust is a lovely golden brown and crisp.

Garnish and Serve: Once cooked, take the chicken out of the oven and allow it to rest for about 5 minutes to retain its juices. Just before serving, sprinkle with freshly chopped parsley for a burst of color and freshness.
