Ingredients

1 pound large shrimp, peeled and deveined

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust for spice level)

Salt and pepper to taste

1 tablespoon fresh lemon juice

2 tablespoons chopped fresh parsley

4 slices thick-cut sourdough bread

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

Optional: lemon wedges for serving

Instructions

Prepare the Shrimp: In a medium skillet over medium heat, melt 2 tablespoons of unsalted butter. Once melted, add in the minced garlic and red pepper flakes. Sauté the mixture for about 1 minute, stirring frequently, until the garlic is fragrant but not browned.

Cook the Shrimp: Carefully add the peeled and deveined shrimp to the skillet. Season with salt and pepper to taste. Cook for 3-4 minutes, flipping the shrimp halfway through, until they turn pink and opaque. Remove the skillet from heat, then stir in the fresh lemon juice and chopped parsley. Set the shrimp mixture aside.

Prepare the Bread: Preheat your oven to 400°F (200°C). While the oven is heating up, lay the slices of thick-cut sourdough bread on a baking sheet, ensuring they are spaced evenly for optimal toasting.

Toast the Bread: In a small saucepan, melt the remaining 2 tablespoons of butter over low heat. Once melted, using a pastry brush, generously spread the melted butter on one side of each slice of bread. Place the baking sheet in the preheated oven and bake for 5-7 minutes, or until the bread is slightly crispy and golden.

Assemble the Melts: Carefully remove the toasted bread from the oven. Spoon the shrimp mixture generously onto the toasted side of each slice, spreading it out evenly. Top with a generous layer of shredded mozzarella cheese followed by a sprinkle of grated Parmesan cheese.

Melt the Cheese: Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is bubbly and lightly golden brown, indicating it is perfectly melted.

Serve: Once baked, remove the shrimp toast melts from the oven and let cool for about a minute. Serve warm, garnishing with extra chopped parsley and lemon wedges for an added zesty touch, if desired.

Presentation Tips: For an appealing presentation, serve the shrimp toast melts on a wooden cutting board or a colorful platter, and arrange the lemon wedges artistically around the edges. A sprig of parsley on each toast will add a pop of color. Enjoy!
