Garlic Butter Chickpea Mash

2 cans (15 oz each) chickpeas, drained and thoroughly rinsed

4 tablespoons unsalted butter

4 cloves garlic, finely minced

1 tablespoon fresh lemon juice

1 teaspoon smoked paprika

Salt and freshly ground black pepper to taste

2 tablespoons fresh parsley, finely chopped

Prepare the Chickpeas: In a medium-sized saucepan, combine the drained and rinsed chickpeas with enough water to cover them by about an inch. Place the saucepan over medium heat and bring the water to a rolling boil. Once boiling, lower the heat to a gentle simmer and let the chickpeas cook for approximately 10 minutes, or until they are slightly softened. Afterward, drain the chickpeas and set them aside.

    Sauté the Garlic: In the same saucepan, melt the unsalted butter over low to medium heat. Add the minced garlic to the melted butter and sauté for 2-3 minutes. Stir frequently to prevent the garlic from browning; you want it to become aromatic and tender.

      Mash the Chickpeas: Return the drained chickpeas to the saucepan and combine them with the garlic butter. Using a potato masher or a sturdy fork, mash the chickpeas to your desired texture, whether you prefer it smooth or with a bit of chunkiness.
