2 large chicken breasts, cut into bite-sized pieces

8 ounces cremini mushrooms, sliced

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon fresh parsley, chopped (for garnish)

Salt and pepper, to taste

1 cup chicken broth

1 tablespoon olive oil

1 teaspoon lemon juice (optional)

Prep the Chicken: Begin by seasoning the bite-sized chicken pieces generously with salt and pepper, ensuring they are evenly coated.

    Heat Oil & Sauté Chicken: Place a large skillet over medium-high heat and add the olive oil. Once the oil shimmers, carefully add the seasoned chicken pieces to the skillet. Sauté for approximately 5-7 minutes, stirring occasionally until the chicken is golden brown and fully cooked. Once done, remove the chicken from the skillet and set it aside on a plate.

      Cook the Mushrooms: In the same skillet, melt 2 tablespoons of the unsalted butter over medium heat. Once melted, add the sliced cremini mushrooms along with a pinch of salt. Sauté the mushrooms for about 5 minutes or until they are nicely browned and their moisture has evaporated.

        Add Garlic and Thyme: Stir in the minced garlic and fresh thyme leaves (or dried thyme). Cook for an additional 1-2 minutes until the garlic is fragrant and slightly golden, taking care not to burn it.

          Create the Sauce: Pour in the chicken broth, using a wooden spoon to scrape up any browned bits from the bottom of the skillet. Bring this mixture to a gentle simmer, allowing the flavors to meld.

            Combine Chicken & Butter: Return the cooked chicken to the skillet and mix everything together thoroughly. Add the remaining 2 tablespoons of butter, swirling the skillet gently to incorporate the butter into the sauce. Allow it to simmer for another 2-3 minutes to ensure everything is heated through and the sauce is rich and buttery.

              Finish & Serve: If desired, add a splash of lemon juice to brighten the flavors. Taste the mixture and adjust the seasoning with additional salt and pepper if needed. Remove the skillet from heat and sprinkle the chopped parsley over the top for a fresh garnish.
